After the outer skin is scraped off and the juice is pressed, the Sudachi fruit, which still has plenty of flavor, is mixed with cane sugar and yeast and fermented. The fermented juice is distilled into a spirit and blended with sudachi juice, concentrated sudachi syrup and essential oil to make Sudachi 9% Citrus Liqueur. The original sake is infused with an abundance of Sudachi aroma. The juice, squeezed without the outer skin, gives Sudachi its distinctive acidity, while the essential oil gives it a refreshing, slightly spicy aroma. It is best served chilled, straight or on the rocks. It is also delicious mixed with soda water. Adjust the strength to your liking.
